Chef Melanie’s Weekly Recipe: Banana Coffee Cake
Banana Coffee Cake
2 Cups Flour
1 Cup Sugar
1 Cup mashed Ripe Bananas
½ Cup Butter
3 eggs
1 tablespoon Lemon Juice
½ tsp. Mace
2 tsp baking Powder
1 tsp Baking soda
¼ teaspoon salt
½ cup chopped walnuts or chocolate chips (optional)
Pre heat oven 350. Grease round tube or Bundt pan.
Cream butter and sugar together until light and fluffy. In a separate bowl combine all dry ingredients. Mash banana with the lemon juice in another bowl. Add eggs one at a time to butter mixture. Add banana to wet mixture then add the dry ingredients. Mix until well combined. Fold in nuts or chip. Bake 25 mins or until toothpick inserted comes out clean.
