French Onion Soup
Serves 4
5 large Onions (thinly sliced)
2 Thyme sprigs
¼ cup olive oil
2 tablespoons butter
1 cup white wine
6 cups Beef Stock (chicken stock or water may be substituted)
½ cup Cognac
Salt & Pepper to taste
½ cup grated gruyere cheese
